This nutritious and delicious recipe is so creamy you won’t even believe it is 100% lactose-free and super easy to make! It is crunchy and slightly spicy, and it is a convenient and fast recipe you can make on days you have limited time. In addition, you can even make the sauce ahead of time and store it in the fridge for a quick meal in the morning or for lunchtime!

Ingredients:

1/4 cup low-sodium soy sauce

4 tablespoons water

1 tablespoon rice vinegar or apple cider vinegar

1 teaspoon sesame oil

2 tablespoons sugar or honey

1/2 teaspoon chili paste

1/4 cup organic crunchy peanut butter

4 garlic cloves minced * 1/4 teaspoon ground ginger

8 oz. noodles fettuccine, lo mein or other

Creamy Crunchy Noodles

HOW TO MAKE THIS CREAMY DISH

Instructions:

Cook noodles according to instructions on the package. Drain and keep warm.

Mix all the ingredients together in a small bowl or measuring cup and make sure to mix well until smooth.

Add salt & pepper to taste.

If you prefer a creamier texture, add more peanut butter.

Heat up the sauce in saucepan or microwave.

Mix the sauce over the noodles. Toss to coat or mix well.

Add chili flakes (optional)

Optional:

You can add some steamed vegetables such as broccoli or bell peppers to make it more balanced.

To make it even more filling you can add some bite-size protein such as chicken or tofu.

Go a little extra with the topping by adding roasted unsalted peanuts, chopped green onions, and some toasted sesame seeds!
